We took some ground turkey out of the freezer this morning, not knowing what we were going to do with it for dinner.  This afternoon Dane asked if I wanted him to make chili.  Yes please!  I have been thinking chili lately and it’s a rainy day in Florida, so it sounded perfect!  We actually had everything that he needed to make it, so we didn’t have to go to the store.  Bonus!

He started by chopping onions, green peppers and red peppers.

He sauteed these in some EVOO (extra virgin olive oil)

And then added the ground turkey to the mix.

After the meat was browned this was transferred to a bigger pot where the following ingredients were added:
Red pepper flakes
Ground cumin
Cayenne pepper
Chili Powder
Salt/Pepper
1 cup of chicken stock
1 can of tomato paste
1 can of rotel
1 can diced tomatoes
1 can black beans


As usual, my awful pictures don’t do this meal any justice.  We served it over brown rice and it was delicious.  Exactly what I wanted.


A pinch of shredded mexican blend cheese and raw onion were added to the top.  We have plenty leftover, so we’ll be taking this for lunch throughout the week.

I’m not positive on the amount of ingredients in this bowl that I ate, but this is how I’m tracking it.

Chicken stock – 0PP
Green peppers – 0PP
Red peppers – 0PP
Onion – 0PP
Canned diced tomatoes – 0PP
Canned rotel – 0PP
1/4 cup tomato paste – 1PP
4 oz. ground turkey – 3PP
1/2 cup canned black beans – 2PP
1/2 cup brown rice – 3PP
1 tbsp shredded mexican blend cheese – 1PP
Total – 10PP (PP stands for Points Plus)
